We're heading into the first weekend of the 30-Day Paleo Challenge. Many of you may be heading out to dinner, parties, movies, etc. where it may be more difficult not to cheat on your diet. Remember, this is only a 30-day challenge! Do what you can to make it through the entire 30 days without giving in! I just ate hard boiled eggs with light tuna. I think you would like this dish JJ! Just put some lemon juice on it.

So here is the marinade I used for my grilled chicken the other day that I made at Andy and Lilia's for me, JJ, Andy, Lilia, Michelle, and the kids. Even the kids liked it.

1 14 oz. can of coconut milk (organic Thai brand from Meijer)
1/4 cup of raw honey (make sure it's raw honey)
4 tbsp. freshly grated ginger root
1/4 cup of freshly squeezed lime juice.

I used it to marinate 8 large chicken breasts and let it marinate all day long, then basted the chicken with the marinade while it was grilling.
We served it over a bed of spinach with some mango on the side/for dessert. Give it a try. It was pretty good.
